My Bean and Chickpea Sandwich is ready in a few easy steps. It’s vegan and gluten free and one of my favorite vegan sandwiches ever. It comes with a mash of beans and chickpeas, fresh vegetables, and a hearty bread. Try the Bean and Chickpea Sandwich and fall in love with it!
Farmer’s Market Day
Saturday is Farmer’s Market Day. Situated right in the heart of the city, it attracts an almost insane number of people. It feels like huge crowds roam the narrow spaces between stands, idling here and there, looking at the presented products. The aromas of fruits, vegetables, freshly baked bread, flowers etc mix and create that unique atmosphere that one can only find on a market like this. Some booths invite the guests to remain for a while, enjoying a good coffee and a piece of cake, or even an early glass of wine from a local winery.
One of these Saturdays I took a stroll myself over the market. It was a fairly hot weekend and I had planned to buy some basic bits and pieces: avocado, tomatoes, cucumber, and eggplant. I had already decided that it was too hot for a full meal, so I’d make a nice healthy sandwich. I still had a jar of vegenaise, which made it more appealing even.
The Bean and Chickpea Sandwich
Happy with my purchases on the market and carrying a full basket, I kept walking slowly through the narrow passages trying to avoid collisions with my fellow markert-shoppers who had fixed their attention solely on the presented goods but not on traffic. Ok, I have to admit to the same. Letting my eyes wander a bit from one display to the next, my attention fell on a booth that sold fresh bread and the marketer was advertising his dark rustic bread. The idea of having that for my dinner sandwich was very tempting. So, I bought a small piece (the marketer feigned a slight disappointment for not selling a bigger one 😉 ) and I was free of further temptations.
At home, I first made a mash from some canned bean and chickpeas. That served as the base spread of the sandwich. Then I added sliced tomato, roasted eggplant, cucumber, avocado, the vegenaise, and a bit of cress. That’s it for my Bean and Chickpea Sandwich. Look at these beauties! And their taste was even better!
- 15 oz (400 g) canned white beans
- 15 oz (400 g) canned chickpeas
- 2 Tbs Olive oil
- 1 Limette juiced
- salt, pepper
- splash white vinegar
- Bread of your choice
- 2 tomatoes
- 2 avocado
- 1 small eggplant
- 1 cucumber
- For the Bean and Chickpea mash:
- Transfer all ingredients to a bowl. Use a masher to manually to make a chunky mash.
- For the sandwich:
- Slice the vegetables. Heat a bit of oil in a pan and slightly roast the eggplant.
- Assemble the sandwich, starting with the mash, then vegetables, vegenaise, and some cress. Enjoy!
