Just as much as I love salads, I’ve fallen in love with cauliflower rice. I’m still puzzled how I could have ignored this for so long. It seems that me and cauliflower rice are meant for each other. Many low carb recipe ideas have come up and some of them you already know: think about my Cauliflower Rice Brussels Sprouts Salad, the Cauliflower Rice Pesto Sandwich, or my Thai Green Curry Detox Cauliflower Rice.
When I was initially a bit skeptical about this, I started playing around with the many options and ever since the first recipe, my Mexican Fiesta Cauliflower Rice, I realized if done right, it’s super delicious and full of flavor.
That means you can say goodbye to bowls of blandness and lack of flavor. No not here! Say hello to deliciousness instead!
So here we have the Cauliflower Rice House Salad. I came with this idea while I was thinking about an easy and approachable salad recipe. A simple one which you can have as a main or serve as a side dish? Full of freshness and flavor for hopefully coming spring.
My search was over very quickly, and this Cauliflower Rice House Salad is the result. As always you can be sure: it’s delicious as lunch or dinner, perfect as a side, easy, delicious, seriously so addicting, and full of flavor.

Hop over to a food processor or blender. Use the pulse function for this and prepare a batch of cauliflower rice according the directions in my Mexican Fiesta Cauliflower Rice recipe. While this batch is frying in the pan, use the time to chop your veggies.
Whip up the dressing by combining mustard, maple syrup, and dill. Only thing left to do is to serve the cauliflower rice in a bowl together with the veggies and the dressing.
Some of you who are ardent readers of my blog might know the base of the dressing sauce from my Vegan Lentil Burger. Many readers have told me that they think this is the best burger ever. And the sauce obviously plays a role in this too. So you know it’s good base. If you haven’t make this burger dream yet, do it now.
I would say you haven’t lived if you had this lentil burger in your life.
As I mentioned, you can enjoy this Cauliflower Rice House Salad as a side to every meal or as full healthy main course. If you want to give make it a fuller meal, I suggest you serve it together with my Thai Green Curry Meatballs.
