Recently I had a big chocolate craving. I have a lot of recipes with which I usually satisfy this: my Banana Bread Brownies, or the Vegan Buckeye Brownies. Of course there are so much more dessert recipes to discover here.
But even if you know all these things are delicious, you know and feel you wanna go try a new route. So friends, I hope you all have a craving for this Chocolate Chip Zucchini Bread. It’s satisfying for all chocolate lovers. And who’s not in? Perfect for breakfast, snackable, cravable, healthy, easy, mouthwatering, drool- worthy, addictive, the perfect sweet, smells incredibly, chocalately, hey you must make this for real.
Ready? You are going to love this! First prepare a baking dish with parchment paper or simply use a bit of coconut oil and grease the pan. Now head over to a bowl and combine all ingredients. Garnish with the rest chocolate chips, bake for 30 minutes at 350°F.
After those 30 minutes keep the oven running and take the bread out of the oven. Cover with aluminum foil and bake for another 30 minutes. This steps is important. Otherwise the chocolate chips on top will burn and get too dark. That’s not really delicious. Believe me you don’t want that.
Please make sure to meet the baking time precisely. I tested the baking time and it’s absolutely accurate. So a shorter or longer time won’t work.
This Chocolate Chip Zucchini Bread also makes a great snack not only for breakfast. If you have any doubts, believe me, you won’t taste the zucchini. The zucchini makes it just a little bit healthier and nourishing for you. The bread has the perfect sweetness thanks to coconut nectar which works so incredibly amazing in this recipe. The cacao butter adds a lovely buttery flavor, being neutral.
Don’t get me wrong. I’m in love with coconut oil, but I really want to create a buttery flavor, which I can only achieve with cacao butter. This has the same flavor like a Chocolate Chip Bread made with a lot of butter and eggs, but in a plant based way so everyone can enjoy and make this no matter what diet you’re following.
You can see it in the pictures it’s also amazing to enjoy with some peanut butter and some banana slices on top.
I also enjoy my Chocolate Chip Zucchini Bread with some raspberry jam and blueberries on top. As you can see, I sprinkled some hemp seeds on top. It’s just a personal preference. I really like the nutty touch in contrast to the sweetness.

- 1 cup vegan chocolate chips + 1/2 cup more for garnish

- 1/2 cup coconut nectar
- 1/3 cup cacao butter melted
