Temperatures are climbing here in the Netherlands. No, they skyrocketed last weekend but it’s been one of the more pleasant unexpected surprises. With sunshine and beautiful blue sky all over the place I’m always in the mood for salads.

Especially when it comes to that sauce. You will have a hard time not to snack on it, and I’m not going to forbid it. But leave some for the salad. Otherwise I would suggest make a double batch so you can snack before or after and have enough for the salad.
The combination is the star here. While it’s easy because you have all the ingredients sitting in your pantry, the salad itself is just so refreshing thanks to the apples, and crunchy thanks to walnuts.

- 4 cups lettuce
- 1/2 cup olives, chopped
- 1/3 cup onions
- 1 granny smith apple, cored and chopped
- 1/4 cup walnuts, toasted
- 1 batch Roasted Garlic Tahini Sauce , prepared
- 2 tbs toasted sesame seeds (optional)
- Toast the walnuts, and prepare the olives and onions by chopping them. Remove the core of the apple and dice it. Add all ingredients to a bowl, mix well. Transfer to a plate or bowl and drizzle sauce over it..
