But one of the best things of being vegan is that I can let my creativity run wild and come up with different ways. So that’s what happened and I came up with this Lemon Pepper Coconut Bacon. Let me tell you one thing right now: it’s nothing short of amazing.
Where I am living, we finally have some signs of spring. As I am writing this today, we had a full day of sunshine and nice warm temperatures. Can you also feel it already? I used it on a big bowl of salad that I craved but it also works fantastically with pasta dishes, sandwiches, wraps, you name it.
I’m going to show you now how to make this. Trust me, the result is delicious, made for spring thanks to a hint of lemon, delicious, versatile, tasty, healthy, satisfying, exciting, and it makes you happy just by eating and smelling it.
Ready? Give this a try, such an easy game. Simply combine all the ingredients in a bowl and mix well. Let sit for 10 minutes so that the coconut flakes fully soak up the flavors in the marinade. When that’s done, prepare a baking sheet with parchment paper and distribute the marinated flakes evenly. Bake the Lemon Pepper Coconut Bacon for about 10 minutes at 400°F and you are done and ready.
Quick note here: I used an organic lemon, so I can happily use the zest as well. Non organic lemons are sprayed and have preservatives. If you’re a lazy kid just buy organic lemon zest so you can be sure.
