You will love this Best Vegan Chickpea Salad – super easy to make, gluten free, and topped with an incredibly delicious salad dressing. Perfect for the whole family, meal prep and work lunches.



  • 1 15 oz can chickpeas, drained
  • 1 batch Peanut butter sauce from the Creamy Peanut Pasta
  • 3 cloves garlic minced
  • 1 cup edamame
  • 1 cup shredded carrots
  • 1/3 cup peanuts, salted
  • salt, pepper to taste

Optional add ons:

  • 1 1/2 cups red cabbage, finely shredded or sliced
  • 1 avocado, cubed


  1. To make the salad dressing, combine peanut butter, sesame oil, water, ginger, tamari, lemon juice, maple syrup, and season all of it with a pinch of salt. Add the garlic and mix everything with a wire whisk. Or put it in a jar, cover with a lid and shake well for 30 seconds. Set aside.
  2. Start with combining chickpeas, edamame, shredded carrots, optional red cabbage and avocado in a bowl top.
  3. Add salted peanuts and sprinkle with the prepared Thai peanut sauce. Do this for 3 more bowls, so you have at least 4 bowls.
