Let’s face it friends, I miss the warmer temperatures of spring and summer. Yes, I’m a summer kid, like wearing a shorts and shirt.
For food, I do like fall with all these amazing autumn flavors, too. Cinnamon, pumpkin, Brussel Sprouts, Butternut you name it.
What I really miss about summer and spring is the opportunity of grilling. With the colder temperatures that’s not a good deal. Grilling means to enjoy the beauty outdoor and it’s the way to go in spring and summer.
But hey it doesn’t mean just because it’s getting colder, that I can’t play with my grilling vibes. Only recently I was totally in that mood and what does one do, when the feeling occurs?
Yes, indoor grilling. So let’s invite some friends and we’re doing this. Best part: you only need a grilling pan, not a lot of space needed, friends.
You might think sandwiches are a thing for summer or outdoor activities. But no! It’s just getting colder, depending on where you living. Maybe you’re lucky and can enjoy the summer vibes all year long.
But today you will see sandwiches are the best thing ever in fall, too.
So let’s get to the kitchen together and we’re making this Blueberry Grilled Cheese Sandwich.
I hope you all get addicted to this vegan sandwich: it’s colorful, savory, hearty, crunchy, flavorful, addictive, easy, comforting, fall approved and really delicious.
First make the blueberry sauce: you might realize you need the same ingredients as for my Easy Blueberry Cobbler, but the instructions are slightly different here.
Simply put all the ingredients in a small sauce pan and heat the mix until it starts to bubble. Let it simmer for 5-10 minutes but do not overcook is. Set the sauce aside.
Last but not least, heat a grilling pan. Assemble the sandwich: first blueberry sauce, then vegan cheese, and mustard sauce. Once the pan is hot, grill the sandwiches until crunchy and hot.
This will take around 6 to 8 minutes. Depending on your grilling pan, results may vary.
You might wonder if you can make this without a grilling pan? Yes, you can but the result will be slightly different. You need a bit oil for a regular pan and of course it won’t get a the typical stripes, which are really beautiful highlights.
It will also be delicious in a regular pan, no problem at all.
But I would invest in a grilling pan. They aren’t expensive and you can use this for so many things, like veggies, potatoes and more. And you don’t need any oil here, so if you watch your oil intake, this is definitely the way to go.
