- Make the blueberry sauce. Simply put all the ingredients in a small sauce pan and heat the mix until it starts to bubble. Let it simmer for 5-10 minutes but do not overcook is. Set the sauce aside.
- Prepare the Vegan Cheese according to the instructions in my Vegan Cheese Quesadillas.
- Check the instructions in my Vegan Lentil Burger recipe to prepare the Mustard Sauce.
- Finally, heat a grilling pan. Assemble the sandwich: first blueberry sauce, then vegan cheese, and mustard sauce. Once the pan is hot, grill the sandwiches until crunchy and hot. This will take around 6 to 8 minutes. Depending on your grilling pan, results may vary.
