Blueberry Grilled Cheese Sandwich

  1. Make the blueberry sauce. Simply put all the ingredients in a small sauce pan and heat the mix until it starts to bubble. Let it simmer for 5-10 minutes but do not overcook is. Set the sauce aside.
  2. Prepare the Vegan Cheese according to the instructions in my Vegan Cheese Quesadillas.
  3. Check the instructions in my Vegan Lentil Burger recipe to prepare the Mustard Sauce.
  4. Finally, heat a grilling pan. Assemble the sandwich: first blueberry sauce, then vegan cheese, and mustard sauce. Once the pan is hot, grill the sandwiches until crunchy and hot. This will take around 6 to 8 minutes. Depending on your grilling pan, results may vary.
