I’m on a roll and love munching on big bowls of salad. Quick and easy homemade salads such as my Sweet Potato Caesar Salad or the Quinoa Taco Salad [vegan, gf].

Just as much as I love salads, I’ve fallen in love with cauliflower rice. I’m still puzzled how I could have ignored this for so long. It seems that me and cauliflower rice are meant for each other.

Many low carb recipe ideas have come up and some of them you already know: think about my Cauliflower Rice Brussels Sprouts Salad, the Cauliflower Rice Pesto Sandwich, or my Thai Green Curry Detox Cauliflower Rice.

When I was initially a bit skeptical about this, I started playing around with the many options and ever since the first recipe, my Mexican Fiesta Cauliflower Rice, I realized if done right, it’s super delicious and full of flavor.

So here we have the Cauliflower Rice House Salad. I came with this idea while I was thinking about an easy and approachable salad recipe.

A simple one which you can have as a main or serve as a side dish? Full of freshness and flavor for hopefully coming spring.

My search was over very quickly, and this Cauliflower Rice House Salad is the result. As always you can be sure: it’s delicious as lunch or dinner, perfect as a side, easy, delicious, seriously so addicting, and full of flavor.

As I mentioned now you can make your own House Salad like every restaurant has one. And you can make this at home with just 6 ingredients. So shall we?

Hop over to a food processor or blender. Use the pulse function for this and prepare a batch of cauliflower rice according the directions in my Mexican Fiesta Cauliflower Rice recipe.

While this batch is frying in the pan, use the time to chop your veggies.

Whip up the dressing by combining mustard, maple syrup, and dill. Only thing left to do is to serve the cauliflower rice in a bowl together with the veggies and the dressing.

For the Dressing:

  • 1 batch mustard-maple sauce from my Vegan Lentil Burger
  • 1/4 cup dill, chopped

For the Salad:

  • 1 batch Cauliflower Rice
  • 1 ripe avocado, sliced
  • 4 scallions, chopped
  • 1 red bell pepper, seeded and chopped

Instructions

  1. Use the pulse function of a food processor or blender to prepare a batch of cauliflower rice according the directions in my Mexican Fiesta Cauliflower Rice recipe. While this batch is frying in the pan, use the time to chop your veggies.

    This is just beautiful Florian! Seriously love all of the bright colors and fresh toppings! I love, love, love fresh dill and avocado and of course, scallions I could eat by the pound, haha! What a beautiful and simple salad. I agree, too, I had cauliflower rice the first time this year and absolutely love it now!
