This Cheesy Potato Casserole with Garlic Croutons is entirely vegan, gluten free, and seriously so delicious. It’s the ultimate comfort for everyone. Trust me you don’t want to miss this on your holiday table and the whole year.



  • 3 lbs potatoes, cooked
  • 1/3 cup nutritional yeast
  • 4 cloves garlic, minced
  • 1 batch white sauce, prepared from my Best Vegan Moussaka
For the garlic croutons:
  • 1 cup bread, cut into cubes (use gf if needed)
  • 1/8 cup olive oil
  • 2 cloves garlic, optional
  • 1 Tbs nutritional yeast
  • salt, pepper to taste
  • 1/2 cup onions
  • 1 bunch broccolini


  1. You have the potatoes pre-cooked and cut into cubes, and the white sauce ready. Add the 1/3 cup nutritional yeast and 4 cloves of minced garlic to that sauce and mix.
  2. If you plan to incorporate the optional onions and broccolini, simply heat a bit oil or vegetable broth in a small skillet and fry everything for about 5 minutes. Season with salt and pepper, set aside.
  3. Now make the homemade croutons. Use gluten free whenever you need. Mix olive oil, remaining 2 cloves garlic, nutritional yeast and a pinch of salt and pepper in a bowl with the bread croutons.
  4. Finally, let’s get to assembling the Cheesy Potato Casserole with Garlic Croutons: Just mix everything in a 10×10 inch casserole dish: potatoes, white sauce, optional fried onions and roasted broccolini until well incorporated. Put the garlic croutons on top, and bake for around 10 minutes at 415°F with a aluminum foil on top. Then remove the foil and bake for 15 minutes more. Serve in bowls or on plates.
