I must have been bitten by a baking bug or something: I’m just really into it these days and have lots of fun experimenting with all sorts of flavors and compositions to create exciting new baking recipes for Contentedness Cooking.
So I was making quite a mess in my new kitchen but tell you what: I loved it!
And what surprised me a lot was that I was really into getting something done with typical Christmas flavors. You know, flavors like cinnamon, vanilla, apples, and nuts.
So surprise then that you can find them all in these Christmas Brownies.
While these brownies were happily baking in the oven, I sat down with cup of tea and relaxed a bit. Decided to check my emails and as expected most of it was the usual junk that should have gone to trash directly. Just one message got my attention.
It was one that came from my favorite online travel agency letting me know that I hadn’t made any bookings for some time and that they were missing me (or my bucks). That single email go me thinking. It is really some time since I went on a vacation. And I started to wonder how easy or difficult it will be to travel as a vegan.
I looked around a bit and – because if I travel, I like to visit the US ever since I lived for a couple of months in Orange County and in Santa Monica – found this list of “Top Vegan-Friendly Cities of 2013” from PETA. Let’s say I wasn’t surprised to find LA, NYC, or even Boulder there.
But Austin, Portland, and Richmond I wouldn’t have expected. All in all, it seems fairly easy to go abroad. I don’t actually know how it is here. I still vividly remember a waiter in a restaurant in Bavaria replying when asked about whether a dish was vegetarian: “Sure, there is only bacon in it…”.
I don’t want to think about the answer about vegan food… Friends, what is your experience? I’m really curious if you find it easy or difficult to find good vegan food options while you are traveling.
Health Benefits of Vegan Christmas Brownies
I was taken out of these thoughts by the sound of oven’s timer. My Vegan Christmas Brownies with Apples were done. What is in them and how do I make them, you ask?
Well, being true to Contentedness Cooking’s motto of “Healthy Vegan Recipes in Easy Steps” you will find that this recipe only has the best of ingredients.
For one, it’s oil-free and the moisture of the brownies comes from a combination of plant-based milk, and fruit juices. Similarly there is no added sweetener just the natural sweetness of medjool dates. Add some raw cacao powder, vegan dark chocolate and you are good to go.
The only extra I did is to first cook the apples in a bit of juice with cinnamon to soften them a bit and to give them the right Christmas flavors.

For the Apples:
- 3 Apples peeled, cored and chopped
- 1/3 cup (80ml) freshly squeezed orange juice
- 1 pinch of cinnamon
- 1 tsp organic vanilla
For the Christmas Brownies
- 1/12 cups (200 g) gf all purpose flour
- 1/2 cup raw cacao powder
- 2 tsp baking powder + 1 tsp baking soda
- 3 oz (100 g) dark vegan chocolate, chopped
- 1 14 oz (400 ml) can coconut milk
- 7 oz (200 g) Medjool dates, chopped
- 1 cup (130 g) walnuts, chopped divided
To prepare the Apples:
- Heat a saucepan and bring the apples with orange juice to a boil. Add cinnamon and vanilla. Cook for around 10 minutes until the apples are soft and the juice is absorbed.
To make the Christmas Brownies:
- Preheat oven to 390°F/200°C.
- In a large bowl, combine all ingredients including the cooked apples. Reserve some of the chopped walnuts for sprinkling over the Brownies. Mix well until the ingredients combine to a soft dough.
- Transfer to a baking dish prepared with parchment paper. Distribute evenly, sprinkle with the reserved walnuts.
- Bake in the oven for 20-25 minutes.
