Description

These Dan Dan Noodles are easy to make with Edamame, vegetable broth, garlic and Chinese sesame paste. An easy 20 minute meal that is packed with flavors and that the whole family will love. No one would ever taste it is naturally vegan.

Ingredients

  • 1 cup Edamame beans, cooked
  • 10 oz noodles, cooked (use gf, if needed)
  • 1 heaping Tbs Chinese sesame paste (see text for alternatives)
  • 4 cloves garlic, minced
  • 3 tbs sesame oil
  • 1/4 cup vegetable broth
  • salt, pepper to taste

Optional add ons:

  • 1 cup mushrooms, finely chopped
  • 2 tsp maple syrup
  • 1 bunch scallions
  • 3 Tbs Tamari sauce
  • 2 tsp chili powder
  • sriracha sauce for serving

Instructions

In a pan heat oil and add garlic together with the optional mushrooms and scallions. Fry for around 3 minutes.

  1. Give cooked pasta to the pot, add Chinese sesame paste, vegetable broth, Edamame, and the optional maple syrup, Tamari sauce, and chili powder. Cook for 8 minutes more.
  2. Serve in bowls or on plates with some optional sriracha sauce.
