Lately I’m craving something sweet. It’s been a while since I posted a dessert recipe. But the wait is over and I want to invite you all. Let us make this Easy Vegan Dessert Quesadilla together! This sweet temptation is so easy to make in no time. Yes, you only need 4 ingredients to indulge yourself, your friends and family.
Dream Big, friends, don’t hold back and enjoy! Lately you can already feel the summer vibes here. I don’t know about you guys but here in the Netherlands sunshine has been rare since last November. But finally I was able to wear a t -shirt last week and some shorts.
And I could work in my new garden and make a small herb garden in there including a small cherry tomato plant. There are some ripe tomatoes already and I’m sure I’ll put them to good use in one of my next recipes.
But back to this Easy Vegan Dessert Quesadilla recipe. It came to my mind while I was enjoying the sunshine. I had a craving for something fruity, something indulgent. Dreamy.
Some friends were coming later, so why not try out something new with them? I do sometimes take my friends as test audience for my recipe creations because it is so important to get feedback – after all I only want to show you the best of me, guys.
Why my Easy Vegan Dessert Quesadilla is your new Show Star
Blueberries are little wonders. You already know this super food from my Easy Blueberry Cobbler. No secret these are low in calories, only 84 calories in one cup!
High in fiber, Vitamin C, K and manganese – those are absolutely valuable to eat them often. Also good to know: they prevent heart disease, improve brain memory and absolutely are anti oxidant wonders.
So the blueberries obviously make up the fruity component. In fact in form of a Blueberry sauce. That’s one of only 4 ingredients. This homemade sauce is absolutely drool-worthy and makes you want to eat it all by itself. But it’s also no secret because we have used this sauce already in my Chia Pudding.
The rest is also easy peasy, no joke! Just mix vegan creme cheese with a bit of vanilla extract, spread on tortillas, add a good dollop of blueberry filling on top of it, done!
That was 4 ingredients and you are done with this Easy Vegan Dessert Quesadilla. If you need it to give it an extra kick, you can drizzle some chocolate sauce over it.
You can easily make this vegan chocolate sauce from chocolate and a bit of coconut oil. It’s so fingerlicking addictive but you can also enjoy it without guilt. Much to the contrary, and I will tell you why.
While it’s so delicious you should know that 3 oz (100 g) of vegan dark chocolate provide you with 11 g fiber, 67 % of the RDA of iron, 58% of magnesium, 89 % of cooper and last but not least 98 % of manganese. Do you know it also contains a lot of Potassium, phosphorus, zinc and selenium?
Not only that! It’s also a beauty food with anti oxidants which will make you shine from the inside out. Don’t you already see the radiant glow of your skin just by eating this sauce with a spoon? 🙂
I can surely say this is a life changer, just think about the immense health benefits of Vegan Dark Chocolate. There is often a high amount of cacao in chocolate bars, 70 up 85% or you go a little bit higher at least 90% but it can be a bit bitter.
I find that 70% up to 80% is the right amount for my chocolate craving that’s what I use and recommend it’s for me the perfect balance of sweet and bitterness flavors. But feel free to use what floats your boat.
So don’t forget the chocolate sauce, that would be so sad. This sauce you can make while you are making the blueberry filling.
Just heat the coconut oil in a small casserole add the chocolate and melt it. If you are lazy use the microwave for it and you are done.
Only 6 ingredients including the chocolate sauce and 3 easy steps between you and the satisfaction of your sweet cravings! What could you ask more for?

- 1 batch blueberry sauce
- 4 oz (120 g) vegan creme cheese or tofutti
- 4 tortillas (choose gf if need)
- 1 Tbs organic vanilla extract
For the optional Chocolate Sauce:
- 2 oz (60 g) vegan dark chocolate
- 2 tsp coconut oil
- In a small bowl, mix vegan creme cheese with vanilla extract, spread on tortillas.
- Add a good dollop of blueberry filling on top. Cover with another tortilla.
- Heat the coconut oil in a small casserole add the chocolate and melt it. Drizzle the sauce over the quesadilla and enjoy.
