Who would say no to Pizza? Anyone? No? Yeah, thought so. Then make sure you do not miss the Fruit Pizza with Tzatziki Sauce.
The problem with my pizza consumption has been for a long time that is was simply unhealthy stuff that I ate. Something conveniently stored in the freezer or once in a while from a delivery service. Yeah, I know – lazy.
One of these days, while I was making my Roasted Garlic Naan and enjoyed kneading the dough, I thought that this would make for a nice pizza crust as well. With that idea in mind, the machinery in my head got kicked up a gear. When I make a pizza with my super-favorite dough, why not making a pizza that has many of my all-time favorites – a Fruit Pizza with Tzatziki Sauce!
A couple of days later, it was gluten-free vegan pizza time. I had already prepared the dough and it was sitting in a warm place for about one hour. Enough time to get started on the toppings. A tomato-based sauce might have worked but I thought that with the Naan-like crust something more exotic was more exciting. My love for tahini must be well known by now. If not, it should be now: I made a tahini sauce with was slightly spicy thanks to a bit of thai curry paste mixed in.
What else? I wanted some more unconventional toppings, not the usual stuff. I decided for a combination of roasted eggplant slices, chickpeas briefly fried in coconut oil, roasted onion, pomegranate, and mango slices. Intrigued?
Now, the cheesy part… I was not in the mood for the usual suspects of vegan cheese substitutes. So instead I skipped it altogether in favor of a garlicky plant-based yoghurt dip.
Assembling my Fruit Pizza with Tzatziki Sauce includes pre-baking the crust, distributing the tahini sauce, adding the toppings, and more baking. I’d put the yoghurt dip after the pizza come out of the oven. Sounds delicious, and it most awesomely is!
