This Hamburger Soup comes together really fast in under 30 minutes. It is so hearty and delicious, even pickiest kids will eat a second plate in no time. A keeper that the whole family will love and no one would ever taste and believe it is vegan.



  • 14 oz vegan ground beef
  • 4 cloves garlic
  • 1 medium onion, diced
  • 4 Tbs vegetable oil
  • 2 cups vegetable broth
  • 14 oz can chopped tomatoes
  • 5 oz tomato paste
  • 2 Tbs smoked paprika
  • 2 Tbs Italian herbs
  • 1.5 cups potatoes, peeled and cubed
  • 1/2 cup carrots, chopped
  • 1/2 cup green beans, chopped
  • salt, pepper to taste


  1. In a large casserole or pot, heat vegetable oil. When hot add garlic, and diced onions. Fry them for about 1 minute before adding the vegan ground beef and fry on high heat for 2 minutes longer.
  2. Add the cubed potatoes (peeled), sliced carrots, green beans, vegetable broth, tomato paste, chopped tomatoes, smoked paprika, and Italian herbs. Season with a pinch of salt and pepper.
  3. Mix well, then bring everything to a boil. Reduce heat to medium, put a lid on top. Stir frequently and let everything simmer for 20 minutes.



If your potatoes aren’t done after 20 minutes (it can depend on the used sort), let it cook for 5 minutes more, make the fork test to check.
