But now it’s time for a new one. Let’s get excited for this Lemon Raspberry Key Lime Pie. For sure this is not your average Key Lime Pie, friends. It’s a special stunner which takes the pie to the next level, thanks to Lemon and Raspberry.

A Key Lime Pie by itself isn’t something new, so sorry I haven’t reinvented the wheel. But believe me and trust me this is seriously a dream.

Whenever I made this just for me (yes, you can do it for yourself) I could eat the half of the cake for myself, because it’s just so good.

Recently I made this for the first time for friends. What can I tell you?

It didn’t last that long and all was gone in a snap. I made two of this babies, and within 10 minutes there was nothing left.

I hope you are ready for a new must make addiction. When you make this Lemon Raspberry Key Lime Pie you can expect the result will be: creamy, drool worthy, lemony, fresh, beautiful, impressive, delicious, and the best thing that can be happen to a pie with lemons and raspberries.

Friends, you wouldn’t believe me how easy this is, so shall I tell you?

Hop over to a high speed blender or food processor. Add all the dough ingredients and pulse a few times until combined. Press the dough into a 7 inch springform prepared with parchment paper or greased with a bit of coconut oil.

Next and last: We need a blender again. Combine all the filling ingredients except the raspberries, process until really creamy and smooth.

Finally give the filling over the dough, and garnish with raspberries.

Enjoy immediately or chill until serving, up to you.

Don’t tell me this isn’t super easy. I know if you just take a look at this show star, you might think it’s complicated, time consuming to make from a lot of ingredients.

But not here, all you need is simple ingredients like avocados, limes, lemons (juice and zest), raspberries, medjool dates, and cashews.

One word: I use organic lemons here, that’s why I use the also their zest to make sure it’s all natural.

Please, don’t do the same with regular lemons. The zest could be full of pesticides, nobody wants that. If you are a bit lazy, buy organic zest form the supermarket.

Regular zests are full of additives and other ingredients, that you don’t want to have on board with your cake.

Ingredients

For the dough:

  • 1 1/2 cups cashews
  • 1 1/4 cups medjool dates, chopped
  • 1 lime, juiced
  • 1/2 organic lemon, juiced + 1 tsp zest

For the filling:

  • 1 heaping cup medjool dates, chopped
  • 2 cups cashews
  • 1 1/2 organic lemons, juiced + 2 tsp zest
  • 1 lime, juiced
  • 2 ripe avocados
  • 1 1/4 cups water
  • Raspberries

Instructions

    This looks so good and healthy Florian! Love all of the whole food ingredients! It looks so creamy and rich! I also love that it is no bake, I love no bake pies and cheesecakes, so easy to make. Can you taste the avocado?
