This Mushroom Quinoa Spinach Lasagna recipe comes together in 2 easy steps from just 6 ingredients. Flavorful, vegan, and gluten free.
- When you prepare the Roasted Garlic Mushroom Quinoa which serves as a pasta substitute, mix in the spinach. That mix plus my Vegan Cheese Sauce and vegan cheese from my Vegan Cheese Quesadillas and you are as good as ready to go.
- For the assembly: Start with a thin layer of marinara sauce, followed by a bit of the quinoa mix, than 1/2 of the vegan cheese sauce. Repeat with quinoa mix, than marinara, rest of the vegan cheese sauce and finish off with remaining quinoa mix, a layer of marinara. Finally top with Vegan Cheese and Vegan Parmesan and bake for 20 minutes at 410°F.
