This Mushroom Quinoa Spinach Lasagna recipe comes together in 2 easy steps from just 6 ingredients. Flavorful, vegan, and gluten free.




  1. When you prepare the Roasted Garlic Mushroom Quinoa which serves as a pasta substitute, mix in the spinach. That mix plus my Vegan Cheese Sauce and vegan cheese from my Vegan Cheese Quesadillas and you are as good as ready to go.
  2. For the assembly: Start with a thin layer of marinara sauce, followed by a bit of the quinoa mix, than 1/2 of the vegan cheese sauce. Repeat with quinoa mix, than marinara, rest of the vegan cheese sauce and finish off with remaining quinoa mix, a layer of marinara. Finally top with Vegan Cheese and Vegan Parmesan and bake for 20 minutes at 410°F.
