Description

This Pasta Fagioli Soup is super easy to make in one pot and naturally vegan, gluten free. Best flavors in a family friendly soup, what else could one want?


Ingredients

  • 2 cups pasta (I used gluten free)
  • 4 cloves garlic, minced
  • 5 cups vegetable broth
  • 28 oz marinara sauce
  • 1 cup bell pepper
  • 15 oz white beans
  • salt, pepper to taste
Optional add ons:
  • 3/4 cup onions
  • 2 Tbs Italian Seasoning
  • 1 tsp garlic powder
  • vegan Parmesan for serving, prepared from the Beet and Spinach Tart

Instructions

  1. Start with a large pot. Heat a bit of oil or vegetable broth. Add bell pepper, garlic, and optional onions and fry everything for around 4 minutes.
  2. Now add uncooked pasta, vegetable broth, marinara, and cook all for around 12 minutes.
  3. Finally, add the white beans. Seasoning with salt and pepper, optional garlic powder and Italian seasoning.
  4. Serve on plates or in bowls and sprinkle with optional vegan Parmesan.
