My Roasted Garlic Mushroom Quinoa comes together with just 6 ingredients in 2 easy steps. It is vegan, gluten free, and makes for a delicious plant based main or side dish.
- 1 cup uncooked Quinoa
- 7 oz mushrooms
- 1 onion
- 2 Tbs Tamari
- 4 Tbs Tahini
- 5 Roasted Garlic cloves, pressed (just roast garlic for around 5 minutes in a pan with a bit oil or for oil free with vegetable broth)
- salt, pepper, to taste
- Cook the quinoa according to the manufacturer’s directions.
- While the quinoa is cooking, heat a skillet with a splash of olive oil, or vegetable broth for oil free cooking. Add onions, mushrooms, cook until golden and lightly browned. Mix in the tahini, tamari, roasted garlic cloves, and cooked quinoa to the skillet. Season with salt and pepper.
