Description

This Southwest Salad is easy to make with simple ingredients that you already have in your pantry. A keeper that the whole family will come back to often, even the pickiest kids. It is a great great 10 minute meal which is easy but yet impressive and naturally vegan.

Ingredients

  • 4 cups lettuce mix
  • 1 tomato, cubed
  • 1 avocado, cubed
  • 15 oz black beans, drained
  • 1/2 cup corn, drained
  • Southwest Dressing (1/2 batch Catalina Dressing + 1/2 tsp chili cumin + 1 Tbs cumin)

Instructions

  1. Combine the prepared Catalina dressing with cumin and chili powder in a small bowl, then set aside.
  2. In a large bowl mix lettuce with black beans, tomatoes, corn, and avocado. Season with an extra pinch of salt and pepper to your taste.
  3. Next give the dressing over it and enjoy. Serve on plates or in bowls.
