Do you remember Michael and Denise? This happy couple was on their honeymoon in Thailand recently after their spectacular wedding which was totally awesome.
Do you know what friends? It all started at on a garden party where they first met, and later lead to the holiday proposal.
I was so excited to see them again after their honeymoon. I have never been to Thailand, have you ever been there? So I was just curious how did they find and enjoy it there. There was an amazing opportunity when they had their flight from Amsterdam which is not far from where I live.
And so they came over and I was thinking about a dish which both would really enjoy – yes it turned out so amazing that you can find it now on the blog today.
I have to tell you guys the result is absolutely flavorful, crispy on the outside and soft in the inside, finger-licking good, delicious, so much that you want it again and again.
Let’s start making the curry sauce first. Combine all the ingredients in a small bowl, and whisk until smooth. Patience! I know it’s hard but let’s straight to the blender.
Combine all the meatball ingredients and blend until smooth. Take the mixture and form with your hands equal sized meatballs. Now you must decide if you bake them in the oven for 20 minutes or just fry them – it’s up to you.
I personally enjoy both options because these are so good and flavorful. Serve with the remaining Curry Sauce, enjoy!

I’m a kinda nut butter addict. I could just eat them with a spoon. And in these Thai Green Curry Meatballs we are going for cashew butter which is one of my favorite.
Do you know guys that it’s so easy and approachable to make your own nut butter in a blender or food processor? And you can add more flavor into to that just by roasting them before. Of course, you can use store-bought but please make sure it just contains nuts – no oils, sugar or preservatives.
Nut butters are not only delicious, they are also weight loss wonders. They are a good source of protein, they might fight bad cholesterol.

For the meatballs:
- 1 15 oz chickpeas drained
- Tandoori mix (think curry, turmeric, chili powder, ginger, salt, pepper)
- 1–2 Tbs Curry sauce (see below)
For the Curry sauce
- 2 Tbs Cashew Butter
- 1 Tbs Green curry paste
- 1/3 cup water to thin
Prepare the curry sauce:
- Combine all the ingredients in a small bowl, and whisk until smooth
Make the meatballs:
- Combine all the ingredients in a blender and blend until smooth.
- Take the mixture and form equal sized meatballs with your hands. Either bake them in the oven for 20 minutes at 410 F or just fry them. Serve with the remaining Curry Sauce, enjoy!
