Everybody knows these weeks, I’m sure. I had a very busy week, there were so many things to do. You get the feeling that your tasks are never ending but the day has only 24 hours.
Sometimes I guess it could be longer – at least to squeeze a little more sleep in. Of course, it’s not a bad thing if you’re busy and the day gets over.
On those days I – and you too I’m sure – I don’t want to give up on eating healthy.
And for sure I’m craving something that is done in minutes. Something that can be easily packaged to take along. And here you go: my Thai Green Curry Sandwich solves this problem easily.
If you are obsessed, like me, with thai green curry paste you have come to the right place. I have already used it in meatballs and a pizza recipe, and now it’s time to up the game with an easy vegan sandwich. You will only need 5 ingredients and 2 easy steps, and it’s done.
I mean come on friends, could you ask for more?
My recipe is absolutely flavorful, creamy, satisfying, drool worthy, easy, fast, and so delicious. I haven’t met one person who can say no to a sandwich. This one will be no exception – in the contrary, people will keep asking for more!
Let’s get started with making this sandwich dream. Best part about it: you don’t even need a blender or food processor.
Combine chickpeas, Thai green curry paste, and veganaise in a bowl. Season with salt and pepper to taste, then just mash with a potato masher. Make sure you leave some texture! Finally, fold in the mango cubes and crushed salted cashews. Just stir, ready.
Now it’s time to grab your favorite bread, give a good amount of the chickpea-curry mixture on the bread, top with tomato slices and onion (optional), enjoy!

- 1 15 oz chickpeas
- 1 cup fresh mango cut into cubes
- 4 Tbs Veganaise
- 2 Tbs Green Curry Paste
- 1/4 cup salted cashews crushed
- salt pepper to taste
- your favorite bread (gf if needed)
- tomato slices
