Description

This fresh and crunchy Thai Quinoa Salad is covered with an amazing Thai peanut dressing. It’s naturally vegan and such a keeper for 15 minute meals and meal prep which the whole family will love.


Ingredients

  • 1  batch Thai Peanut Sauce with Basil, prepared
  • 3 cups quinoa, cooked
  • 2 carrots, shredded
  • 1 cup bell pepper, chopped
  • 1 cup edamame
  • 1/2 cup chopped peanuts
Optional add ons:
  • 3 beets, shredded
  • 6 scallions, finally chopped

Instructions

  1. Just combine cooked quinoa, shredded carrots, edamame, bell pepper, optional scallions, shredded beets.
  2. Finally put chopped peanuts on top, put the Thai peanut dressing on it, and mix everything well until incorporated.
  3. Divide on plates, or bowls and serve immediately or chill.
