It’s been a while since I posted a burger recipe. But now it’s time to get really excited, it was worth the wait. This Vegan Red Lentil Burger is a worthy successor for my Vegan Lentil Burger. Very different but just as amazing.
When I made this new recipe, I was so excited, it felt like a first date. Do you know the feeling when you are looking forward to it? It was the same with this vegan burger recipe.
I was thinking about it for a long time but until I had eventually made it, there is no way to be sure if it comes out the way I imagined it. Will it be a one time meeting only?
Or will it become a frequent visitor? In some way, food is like a date, sometimes its bland, not entertaining, not rich in flavor – but not this one! The result is absolutely drool worthy.
Easy and healthy: the Vegan Red Lentil Burger
Even better, friends, is that all you need are 6 simple ingredients and easy steps to burger heaven. I don’t make any false promises with this new show star.
So obviously the main ingredient of this recipe are the red lentils. Just look at their health benefits and you realize you can have an awesome burger which is also beauty food inside out. Red lentils are truly little wonders: 1 cup provides 15.6 g of fiber, which is 62,5 % of the 25 g daily recommend intake.
And to get to the inevitable protein question: 17.9 g of protein – deal? 40 grams of carbohydrates help avoiding imbalanced blood sugar which may be responsible for weight gain.
That’s all good to know but it is even better to know how to make my Vegan Red Lentil Burger. So turn the spotlights on and say hello. The list of ingredients is short: apart from the red lentils, I use soft apricots, pistachios, and breadcrumbs for the burger patty.
It’s so easy. All you need to do is put all the ingredients in a food processor or blender and blend until you have a chunky texture. Do not over blend, love some texture. If you want you can put 1 up to 2 Tbs of the curry sauce (by mixing vegenaise with curry powder) into the patties to add more flavor.
You can have fun to prepare this patties in 2 different methods, fry or bake it for 20 minutes and you are done. Choose your favorite toppings and sauce. As I mentioned, you can get an awesome curry sauce from mixing vegenaise and curry powder.
You may wonder why the pistachios are among the ingredients. I think they are delicious, give texture, and add a nice crunch plus they are really, really healthy.
Snacking on those little wonders is actually good for you, it may lower your cholesterol. They also include a good amount of fiber which make them filling. This Vegan Red Lentil Burger is a drool-worthy indulgence made from red lentils, with apricots and pistachios, and a stunning easy curry sauce.
- 1 cup red lentils uncooked
- 1/2 cup pistachios peeled
- 4 soft apricots chopped
- 1 cup gf breadcrumbs
- 1–2 Tbs of the curry sauce, optional
For the curry sauce:
- 5 Tbs Vegenaise
- 4 tsp curry powder
- Cook the lentils according to instructions.
- Prepare the curry sauce by whisking together vegenaise and curry powder.
- Peel the pistachios and chop the soft apricots. Transfer to a blender or food processor together with the red lentils. Pulse until you get a chunky mixture. Add breadcrumbs and mix well.
- Form patties and either fry with little oil or bake in to oven for about 20 minutes.
