Description

Among all 20 minute meals this Vegetarian White Bean Chili will be your first choice for dinner. This white bean chili recipe is obviously made with white beans, chopped tomatoes, bell pepper, chili powder, minced garlic and onions. Comforting, easy, and at the same time vegan and gluten free.


Ingredients

  • 2 15 oz cans white beans, drained
  • 3/4 cup onions, diced
  • 5 cloves garlic, diced
  • 1 cup bell pepper, chopped
  • 2 15 oz cans chopped tomatoes
  • 2 tbs Chili powder
  • salt, pepper to taste

Optional ads ons:

  • 1/2 cup vegan cream cheese
  • 1/2 cup jalapenos, chopped
  • 1/2 cup corn
  • 2 tsp cumin
  • 2 tsp maple syrup

Instructions

  1. First you will need a large pot. Add a bit of oil or vegetable broth. Fry onions, minced garlic, and bell pepper for around 3 minutes. Then give the white beans, chili powder, and chopped tomatoes to the mix.
  2. Finally, if you like, add all the optional extras like vegan cream cheese, cumin, jalapenos, corn, or maple syrup.
  3. Cook all at medium heat for 10 minutes. Serve on plates or bowls and enjoy.
