But if you can’t have dairy or are simply following a plant based diet, it is a challenge to find a recipe that fits.

What is aioli?

A creamy aioli sauce is the heart of this easy recipe. You wonder what aioli is? It’s made traditionally from mayonnaise, oil, garlic, and then seasoned with salt and pepper.

Well, how to make this plant-based is pretty straightforward.

You can simply use vegenaise, aka vegan mayo, and add some garlic. That’s it, you are done. Nothing special or magic here.

Also if you can’t find any vegenaise even after looking for it online, you can make it at home from scratch. I’ve shown you earlier in my recipe for the Golden Beet Sandwich how that is done:

All you have to do is putting all the ingredients (cashews, olive oil, lemon juice, water, apple cider, finally garlic and a pinch salt) in a blender.

How to make a tortellini salad

So with the vegan aioli ready, we can make this Aioli Tortellini Salad. Cook the tortellini of your choice according the manufacturer’s directions.

While they are cooking, chop the veggies you want to add to the salad. I personally like a mix of bell pepper, onions, and carrots best. They symbolize a crunchy freshness to me. But you can use whatever you like and want.

To make the aioli dressing, mix in a bowl the vegenaise with garlic, and season with salt and pepper.

Now add the cooked tortellini, chopped veggies, and peas.

Carefully mix everything with the vegan aioli until well coated. Divide into plates or eat straight from the bowl.

This Aioli Tortellini Salad makes a quick lunch, dinner, especially for during weekdays. Also you can bring it to potlucks, or any other gatherings.

If you absolutely can’t find any vegan tortellini, you can use your favorite regular pasta instead. It will work just as well with this recipe.

Ingredients

  • 1 1/2 cups vegenaise
  • 3 cloves garlic, pressed
  • 8 oz tortellini, uncooked (I used gluten free)
  • 1 cup mixed veggies
  • 1/2 cup peas, cooked
  • salt, pepper to taste

Instructions
