Crustless Quiche

This Crustless Quiche is super easy to make and the only low carb quiche you will need. Naturally vegan this gluten free quiche is made with veggies like broccoli, carrots, onions, and tofu. You won’t miss the carbs or the fact there isn’t any crust in this healthy quiche recipe. It tastes just like the real deal, if not really better than that. The quiche is also super kids friendly, even picky kids will love this.

Tofu is a staple in my house when it comes to sources of protein. Like in this Chinese 5 Spice Tofu Stir Fry where it gets combined with vegetables.

Building on this great combination, I came up with this Crustless Quiche recipe. Trust me, it is a must make for all your low carb meals.

Try it out and you will see it is hearty, filling, healthy, flavorful, super easy to make in a food processor, the ultimate comfort food for your healthy food recipes, and a must make no matter if vegan or not. Everyone will got a big soft spot on it.

Also the result is really cheesy, if you add the optional vegan cheese and nutritional yeast.

What’s in this no crust quiche:

When you check out the recipe card below, you see the basic version needs only 6 ingredients (not counting salt and pepper): broccoli, carrots, onions, garlic, tofu, almond or cashew milk.

But you can add more optional extras to make it even more delicious and flavorful.

My suggestions for you to add are bell pepper, vegan cheese, nutritional yeast, paprika spice, garlic powder, and mustard.

How to make this Crustless Quiche:

First preheat your oven to 410°F. Heat a large skillet or pot. Use a bit of oil (for oil free just add a bit vegetable broth) and add onions and carrots. Fry for around 3 minutes, then add chopped broccoli to the skillet and fry for another 5 minutes. Turn to medium heat and season with salt and pepper.

In the meantime, combine tofu, almond or cashew milk, minced garlic, optional mustard, garlic powder, vegan cheese, nutritional yeast, and paprika spice in a food processor. Season with salt and pepper again, process until smooth and creamy.

Finally, you will need a 8×11 inch casserole dish. Here you have 2 options: wither use baking paper or grease the dish with some oil. Combine the tofu mixture and fried vegetables in a big bowl.

Transfer everything to the casserole and bake for around 45 minutes in the preheated oven.

After baking, allow the quiche to cool down for at 5 minutes, better 10 minutes. Because otherwise if you serve it, it might be get a bit crumbly.

Note: If you use the 8×11 inch casserole it will came out like the pictures. If you prefer a thinner crustless quiche, you can use a 10×10 inch casserole instead. But of course the result will be a bit different from the pictures.

Pro tips for making this Crustless Quiche

For your freezer meals: you can make this whenever you want and need it. It freezes beautifully, just make sure to let it cool completely before freezing.

If you’re on a keto diet to make a Keto Quiche just make sure to reduce carrots or leave them out. Because carrots are typically higher in carbs than other vegetables. Also don’t use the optional vegan cheese and nutritional yeast, but make sure to add a bit more flavor to compensate missing ingredients like carrots. 

As a brunch recipe, you can make this 2 days before and bring it to your get togethers, potlucks, or other festive events. It will reheat easily. As I mentioned before it is amazing cold or hot, yum.

  • 1 big head broccoli, chopped
  • 6 cloves garlic, minced
  • 1/2 cup carrots, peeled and chopped
  • 1 lb tofu drained
  • 1/3 cup almond or cashew milk
  • 1/2 cup onions, chopped
  • salt, pepper to taste

Optional add ons:

  • 1.5 cup vegan cheese
  • 1/3 cup nutritional yeast
  • 1 cup bell pepper, chopped
  • 2 tsp garlic powder
  • 1.5 tsp paprika spice
  • 2 tsp mustard
