Veggie Burger with Cauliflower

I'm so excited to deliver a new burger recipe. Lately I have a big craving for burgers and I'm so sharing this new Veggie Burger recipe with all of you to enjoy.
I know you'll be thrilled and excited judging from how much you liked my other vegan and gluten-free burgers like my Vegan Buffalo Burger, Vegan Lentil Burger and Black Bean Burger.

This easy recipe contains only 3 ingredients for the patty and just two ingredients for the sauce - the whole recipe only has 5 ingredients (plus of course optional toppings for your choice).
I'll tell you what I think make an awesome burger recipe: apart from getting really good, fresh burger buns, you really, really need a good combination of patties and sauce.
Flavors have to mix and enhance each other. All of my burger recipes therefore come as a package and so does this Veggie Burger with Cauliflower.
I created a super delicious tahini sauce with a touch of maple syrup. I also use a splash of the sauce for the patty to add some flavor. This means you can of course use your own sauce but the result may be different.
You probably know my other burger recipes which I mentioned before and know that those are easy to make, delicious, timesaving, full of flavor, and satisfying.

This time we make the patties from cauliflower and lentils as the main ingredients. We add so much flavor by roasting the cauliflower for around 20 minutes. The cauliflower adds a lovely crunch the lentils adds an earthy flavor to the Veggie Burger patties.
After the cauliflower has been roasted, place lentils, cauliflower, gf breadcrumbs, and optional 1 Tbs of the tahini sauce in a blender or food processor.
Process until you have a chunky consistency, not too smooth or else the mix will end up too soft and it'll be difficult to make nice patties.
You can choose if you want to fry or bake the patties. In the oven it will take around 20 minutes, in the pan it's of course much faster.
Assemble the Veggie Burger with Cauliflower on a fresh bun with your favorite toppings, the tahini sauce and enjoy.
I guarantee that with this easy veggie burger recipe you will on your way to burger heaven!
Veggie Burger with Cauliflower
Ingredients
- 1 Cauliflower (cut into florets and roasted for 20 minutes)
- ½ cup (100 g) uncooked lentils or 1 14 oz (400 g) can lentils
- 1 cup bread crumbs (gf)
- 1 Tbs tahini sauce (optional)
- curry
- salt, pepper to taste
For the tahini sauce:
- 3 Tbs Maple syrup
- ¼ cup (60 ml) water
- 2 Tbs tahini paste
Instructions
For the tahini sauce:
- In a small bowl, whisk together tahini, maple, and water.
To make the patties:
- Preheat oven to 390°F/200°C. If you use uncooked lentils, cook them according to the manufacturer's instructions. Let cool.
- Wash the cauliflower and cut into florets. Put on a baking sheet and roast for about 20 minutes. Set aside to cool.
- When cold, transfer to a blender, add remaining ingredients. Process until you get a chunky mixture.
- Form patties and either fry or bake them.

Very beautiful pictures Florian. I love these burgers and their simplicity. I have never tried cauliflower in a burger before, but I bet it gives fantastic texture. Sorry KC, I'm a bit behind in answering my posts. I don't usually recommend specific brands because frankly I don't know the US scene very much (I'm living in the Netherlands). I get mine from a local store. I bet any organic store/whole foods market would have a good selection.

I just made these. The patties barely stay together (even with the tahini) and the sauce is very, very thin. The patty mixture tastes great, so I'm going to make them anyways. I may remake sauce and not put in the water.

I eat sweet tahini like the sauce of this recipe as a bread spread, usually for breakfast. I make a mixture of tahini and agave, tastes like tahini halva and it's a nice alternative to peanutbutter for a vegan protein bread spread 🙂

Hello from Athens(Greece) and thanks for sharing this delicious recipe with us! finally I manage to try this recipe and the flavor was just amazing. The only problem I came through is that when I cooked the burger they were not really “compact”.I bake them in the oven then I tried then in the grill as well but still they were loosing their shape and they were too soft. Maybe it’s because the cooked lentils? If I use row lentils soaked over a night like we do for the falafel maybe it will work? When I make them the mix is really compact, is when I cook them they have this problem…
Hi Penelope! I've never experience this issue, but I think the patties will hold the shape though baking only if you press them with your hands roughly together. Also make sure that any liquid is removed from your cooked lentils. Hope that helps and clarifies.
@Florian, hello again. So i decide to use row lentils soaked over a night instead of cooked and it work just perfectly. Great texture and flavor! My husband that hates both lentils and cauliflower he was so thrilled about this recipe. ♥️
