My new Avocado Pesto Pasta Sauce is a creamy dream that is a match made in heaven for your favorite pasta. It is super easy to make, ultimately delicious, vegan, gluten free, and simply a must make! Works also as a salad dressing.

Now we are right in the middle of my favorite time of the year. It’s sunny, it’s warm, and just so super pleasant. What more do we really need?

OK, we need some food, that’s true. But that is not a big deal because that’s what I’m here for. And I have seriously one of the most yummy dairy free pasta sauce recipes for you guys today.

But before we get to that, I wonder what you are all up to this summer.

Somehow in summer I crave big bowls of pasta like my Roasted Garlic Sun Dried Tomato Pasta. That one is seriously good and addicting. Or beautiful and colorful salads like this Quinoa Taco Salad [vegan, gf].

The really best thing about this recipe is that it is so incredibly easy to make. I bet you guys must be thinking I’m trying to kid you. But trust me, I don’t make any jokes here.

Can you imagine you can use a simple blender or food processor to make this? No high speed or fancy gadget is required here. Big plus for everyone.

It is full of healthy fats from avocado and cashew butter, full of delicious flavors, super easy, exciting, versatile, delicious on it’s own, no need for anything else.

Ok, let’s do this now. As I mentioned, all you need is a blender or a food processor.

Add all the ingredients (avocado, cashew butter, garlic, lemon juice, water) to its bowl and blend until smooth. Season with salt and pepper. Yes, that’s all.

Isn’t it easy? This is a pasta sauce, alright, so I would say let’s start with some pasta. That’s always a winner and we can take it from there to enjoy it even more.

Because I think this makes also an amazing spread for sandwiches or wraps. Or as an appetizer on some portobello mushrooms. Or put on some tofu or tempeh and marinate.

Ingredients

  • 1 ripe avocado
  • 1/3 cup cashew butter
  • 4 cloves garlic
  • 1 lemon, juiced
  • 1/2 cup water
  • salt, pepper to taste

Instructions

  1. Add avocado, cashew butter, garlic, lemon juice, water to its bowl and blend until smooth. Season with salt and pepper.

Hi Mel! I think this might work. You can freeze for individual portions in ice trays or larger quantifies in containers. Hope that helps. Let me know what you think.

This was a great recipe and easy. I didn't have cashew butter but I soaked some cashews and blended them, worked great. I would say use 3 clove of garlic instead of 4 because it was a bit strong. Thank you for thos recipe.
