  • 2 cloves garlic  
  • 8 ounces Tofu, drained and cubed 
  • 3 tablespoons Soy sauce 
  • 2 tablespoons chili oil + more for serving 
  • 5 Green onions, chopped  
  • Salt, pepper to taste

Instructions

  1. Cook the noodles according to the package instructions. Some brands of rice noodles are ready to use straight from the package, while others require a short soak in hot water (5–7 minutes) or a quick boil (2–3 minutes). Drain the noodles well and toss lightly with a drizzle of oil to prevent sticking. Set aside.
  2. Cut firm or extra-firm tofu into ha;f-inch cubes and pat dry with paper towels to remove excess moisture. Heat 2 tablespoons of vegetable oil in a large wok or deep skillet over medium-high heat until shimmering. Add the tofu in a single layer and let it sear undisturbed for 3-4 minutes. Turn and cook another 2-3 minutes until at least two sides are golden and crisp.

Add the 3 sliced green onions to the tofu. Stir in 3 cloves of garlic, pressed or finely minced, along with a pinch of salt and freshly ground black pepper. Cook for 2-3 minutes, stirring occasionally, until fragrant and lightly golden.
