An easy meal prep idea: this recipe also reheats beautifully.

Making the BBQ Tempeh Rice Bowl

Preheat oven to 415°F.

After preparing the marinated Tempeh, reserve rest of BBQ sauce for serving. On a baking sheet prepared with parchment paper, distribute marinated Tempeh evenly, and bake for around 20 minutes.

Meanwhile cook your rice according the manufacturer’s directions. Mine was ready in around 8 minutes.

The BBQ Tempeh Rice Bowl is a great family dinner.

Now heat a bit of oil (or vegetable broth, if you avoid oil for any reason). Add broccolini and minced garlic and fry everything for around 6 minutes. You really want some texture in your broccolini, otherwise it can be too mushy and tasteless.

So for me 6 minutes is ideal, but feel free to adjust to your own liking and taste.

Serve in bowls or on plates. Enjoy and serve with the remaining BBQ sauce.

Once you’ve tried it, you want to eat this almost everyday for dinner, lunch, bento boxes, lunch boxes and so much more. It is so satisfying, filling and high in flavor with little effort even for make ahead meals.

Prepare it a couple of days in advance. I would say around 5 is absolutely fine, and enjoy even more fantastic flavors that you can have at any day of the week in no time.

Reason to love this BBQ Tempeh Rice Bowl even more and variations:

Smoked tempeh: prepare the BBQ tempeh like in the instructions above, but  add 3 tsp liquid smoke

Black rice: only recently I served it with black rice which turns out delicious. For real it will take a bit longer, simply because black rice needs a longer cooking time. But it was all worth the effort.

Perfect flavor combination of sweet and spicy.

Grilled tempeh: instead of using the oven use your outdoor grill, or grilling pan this will add even more texture and BBQ flavor.

Coleslaw recipe: use your favorite coleslaw prepare this BBQ tempeh according the directions, put it on bagels, bread or rolls with coleslaw to have a tasty BBQ tempeh sandwich.
