How to make this Chickpea Mash Green Bean Casserole

Shall we start? First mash chickpeas with garlic, onion powder, coconut milk and nutritional yeast  and add a pinch salt and pepper. Set a side.  Then heat a skillet with a bit of oil or vegetable broth for oil free cooking.

Add green beans and onions, season with salt and pepper, and cook these until lightly golden and soft.

Next, let’s the make the topping. It starts all in a small bowl. Mix onions and all the other ingredients until they all well coated. Fry the mixture in a pan with oil or vegetable broth until golden.

Or just simply put these in the oven for around 15 minutes at 410°F and bake for around 15 minutes.

Assemble the casserole: start with the green bean mix, followed by the chickpea mash. Finish with the topping. Bake for 15 minutes at 410°F, enjoy.

Ingredients

  • 2 15 oz chickpeas drained
  • 1/3 cup coconut milk, full fat
  • 1 tsp onion powder
  • 1 lb green beans, trimmed and washed
  • 3 cloves garlic, peeled and pressed
  • 1/4 cup nutritional yeast
  • 2 red onions, peeled and chopped
  • salt and pepper, to taste

For the topping

  • 1 red onion, peeled and sliced
  • 1/2 cup bread crumbs (I used gluten free)
  • 2 Tbs nutritional yeast
  • 1 clove garlic, pressed
  • salt and pepper, to taste

Instructions

Hi Kay! I use a 8x11 inch casserole and there is no need to grease.

Hello: I can't digest beans but I can digest garbanzo beans. Can I just use all chick peas and not white beans? Or maybe use a cashwe cream instead? Thanks,
