When it comes to easy recipes, I have found new love for rice. Especially leftover rice, since I tend to have it sitting in my fridge.

And when it comes to using it, I have already shared some of my all-time favorite recipes like these Spanish Rice and Beans, the Rice and Beans Quesarito, or my Wild Rice Pilaf [one pot, 25 minutes].

I do not recommend freezing this because the bell pepper and celery will loose a lot of flavor and texture.

What should I do instead?

Store it in the refrigerator in an container with a lid on top for around 6 days. Please make sure to use an airtight container, otherwise freshness cannot be guaranteed.
