Harissa Chickpeas (Crispy, Over Hummus, 20 Minutes)

These harissa chickpeas are fried in olive oil until golden and crunchy, then tossed with fresh garlic and harissa paste until every chickpea is coated in a spicy, smoky glaze. Spoon them over a creamy swoosh of hummus, scatter fresh parsley on top and serve with warm pita for scooping. It's a crispy, creamy, high-protein plate that's ready in about 20 minutes and works as a snack, a light dinner or a party appetizer.

What makes these harissa chickpeas different

Most popular harissa chickpea recipes are saucy. Some simmer the chickpeas in crushed tomatoes with harissa and mash a few to make them sticky, then serve them over whipped feta. Others turn them into a creamy stew with coconut milk, onion, tomatoes and greens. There are also no-cook versions, where cooked chickpeas are simply marinated in harissa, lemon and garlic.

This recipe goes for crunch instead. The chickpeas are patted dry and fried in olive oil until they're golden and crispy on the outside, and only then do the garlic and harissa paste go in. The harissa coats the hot chickpeas in a thin, spicy glaze that clings to every one without making them soggy.

The other difference is how it's served. Instead of a whipped feta base or a bowl of stew, the chickpeas go straight onto a bed of hummus. The cool, creamy hummus balances the heat of the harissa, the parsley adds freshness, and warm pita turns it into a plate you can scoop and share. It's fully plant-based and uses only four ingredients for the chickpeas themselves.

Why you'll love this recipe

It's all about texture. Crispy, spicy chickpeas on top of smooth, cool hummus, scooped up with soft, warm pita: every bite is crunchy, creamy and a little fiery. It's the kind of plate that feels like a restaurant mezze but takes almost no effort.

It's fast and simple. One can of chickpeas, a couple of tablespoons of harissa, garlic and olive oil are all you need for the topping, and it's done in one pan in about 20 minutes. With store-bought hummus and pita, there's nothing else to cook.

It's also filling. Chickpeas, hummus and pita together make a plate with roughly 16g of protein and 10g of fiber per serving when shared between four, or a hearty meal for two. It works as a weeknight dinner, a quick lunch or an easy appetizer for guests.

Ingredient notes

Chickpeas. One 15 oz can, drained, rinsed and patted very dry. Dry chickpeas fry up crispy; wet ones steam. Remove any loose skins as you dry them, as skinless chickpeas crisp even better.

Harissa paste. Two tablespoons of harissa paste from a jar or tube. Harissa is a North African chili paste made with roasted red peppers, chilies, garlic and spices like cumin and caraway. Brands vary a lot in heat and salt, so taste yours first and adjust the amount.

Garlic. Three cloves, minced. It goes in at the end so it turns fragrant without burning.

Olive oil. Two tablespoons for frying the chickpeas. It also carries the harissa flavor, so a little spicy harissa oil ends up on the hummus too.

Hummus. About one cup for serving. Use your favorite store-bought hummus or make your own. A plain or lemony hummus works best to balance the spicy chickpeas.

Pita and parsley. Warm pita bread for scooping, and a handful of chopped fresh parsley for freshness and color.

Salt and pepper. Season the chickpeas at the end, after the harissa is in, since some harissa pastes are already salty.

How to make harissa chickpeas

Drain and rinse the chickpeas, then pat them very dry with a clean kitchen towel. Heat the olive oil in a large skillet over medium-high heat. Add the chickpeas in a single layer and fry for 8 to 10 minutes, shaking the pan every minute or so, until they're golden and crispy on the outside.

Turn the heat down to medium-low. Add the minced garlic and cook for about 30 seconds, then add the harissa paste and toss for 1 to 2 minutes, until every chickpea is coated in a glossy red glaze and the garlic is fragrant. Season with salt and pepper and take the pan off the heat.

While the chickpeas fry, warm the pita in a dry skillet, the oven or directly over a gas flame. Spread the hummus on a plate or shallow bowl, making a swoosh with the back of a spoon. Pile the harissa chickpeas on top, drizzle over any harissa oil left in the pan, scatter the parsley over and serve with the warm pita.

Substitutions

Rose harissa is a milder, slightly floral alternative to regular harissa paste. If you don't have harissa at all, mix one tablespoon of tomato paste with one teaspoon of smoked paprika, half a teaspoon of cumin and a pinch of chili flakes for a quick stand-in.

Any hummus works as the base: plain, lemon, roasted red pepper or garlic hummus all pair well. For a different creamy base, try dairy-free yogurt mixed with lemon and garlic, or a thick tahini sauce.

Swap the pita for flatbread, naan, toasted sourdough or crackers, or serve the chickpeas over rice or couscous for a heartier meal. Fresh cilantro or mint can replace the parsley.

Recipe tips

Dry the chickpeas thoroughly. This is the most important step for crispy results. Pat them dry and let them sit on the towel for a few minutes while the pan heats.

Don't crowd the pan. Use a large skillet so the chickpeas sit in a single layer. If you double the recipe, fry them in two batches; crowded chickpeas steam instead of crisping.

Add the harissa last and on lower heat. Harissa paste contains chili and garlic that burn quickly. Lowering the heat before adding the garlic and harissa keeps the glaze bright and spicy rather than bitter, and also reduces splattering.

Ways to serve

Serve it as a mezze plate: hummus with harissa chickpeas in the center, warm pita on the side, and extras like olives, cucumber slices, cherry tomatoes and pickled red onions around it. It's an easy, impressive appetizer for parties and holiday gatherings.

For a filling lunch or dinner, add a simple chopped salad or a scoop of couscous, rice or quinoa. You can also stuff the chickpeas and hummus into pita with some lettuce and tomato to make a quick sandwich.

The crispy harissa chickpeas are great on their own as a spicy snack, or sprinkled over salads, grain bowls, roasted vegetables and soups for extra crunch and protein.

Storage and make-ahead

The chickpeas are crispiest right after cooking. Leftovers keep in an airtight container in the fridge for up to 4 days, but they'll soften.

To re-crisp them, reheat in a dry skillet over medium heat for 2 to 3 minutes, or in an air fryer at 375°F for 3 to 4 minutes. Store the hummus and pita separately and assemble the plate fresh.

For entertaining, fry the chickpeas up to a few hours ahead and keep them at room temperature, then re-crisp them briefly before piling them onto the hummus.

FAQ

How spicy are harissa chickpeas?

It depends on your harissa paste. Most brands give a medium heat with two tablespoons, and the hummus cools it down. Start with one tablespoon if you prefer it milder, or add more for extra heat.

Can I roast the chickpeas instead?

Yes. Toss them in the olive oil and roast at 425°F for about 20 minutes until crispy, then toss with the garlic and harissa and roast for 3 to 5 more minutes. Pan-frying is quicker and gives a more even glaze.

Can I use dried chickpeas?

Yes. You'll need about 1½ cups of cooked chickpeas. Make sure they're fully cooked and very dry before frying.

How much protein is in this plate?

Shared between four with hummus and pita, each serving has roughly 16g of protein and 10g of fiber. As a meal for two, it's about double.

Is it vegan?

Yes. Harissa paste, chickpeas, olive oil, garlic, hummus and pita are naturally plant-based. Check the label of your pita, as a few brands contain dairy or honey.
