How to make Hamburger Soup

In a large casserole or pot, heat vegetable oil. When hot add garlic, and diced onions. Fry them for about 1 minute before adding the vegan ground beef and fry on high heat for 2 minutes longer.

Add the cubed potatoes (peeled), sliced carrots, green beans, vegetable broth, tomato paste, chopped tomatoes, smoked paprika, and Italian herbs. Season with a pinch of salt and pepper.

Mix well, then bring everything to a boil. Reduce heat to medium, put a lid on top. Stir frequently and let everything simmer for 20 minutes. 

Note: If your potatoes aren’t done after 20 minutes (it can depend on the used sort), let it cook for 5 minutes more, make the fork test to check.

It makes such an amazing dinner, lunch, or even meal prep that always satisfies all tastes from the first to the last bite.

Step 2: adding liquid ingredients to the pot and cooking everything.

Can I freeze this?

You can. I would recommend using individual freezer bags. And make sure when you precook the soup (or if you have leftovers) that it always is cooled down properly before freezing.

It will last for around 4 months

Alternatively you can make a bigger batch and store it in the fridge, where it will last for 4 days.

  • 14 oz vegan ground beef
  • 4 cloves garlic
  • 1 medium onion, diced
  • 4 Tbs vegetable oil
  • 2 cups vegetable broth
  • 14 oz can chopped tomatoes
  • 5 oz tomato paste
  • 2 Tbs smoked paprika
  • 2 Tbs Italian herbs
  • 1.5 cups potatoes, peeled and cubed
  • 1/2 cup carrots, chopped
  • 1/2 cup green beans, chopped
  • salt, pepper to taste

Instructions
