Who doesn’t love a rich caramel dessert topped with chocolate goodness? Something like my Vegan Caramel Shortbread (Copycat Twix Style)I know you all love it, I love it, and we all wanted a big piece of that one – or maybe two.

Twix was one of my favorite chocolate bars before going vegan, so I just had to created a homemade one.

Now, friends, my second most favorite chocolate bar in childhood were Snickers. Yes I was – and still am now even more –  a peanut butter kid.

I love to snack peanut butter straight from the jar, so when I was thinking about some vegan homemade Snickers indulgence, it had to include peanut butter for real.

Vegan Snickers Bars.

With only two extra ingredients, you can transform the Twix style shortbread into Vegan Snickers Bars.

The preparation is a simple game as always.

Let’s start with making a batch of the shortbread dough. Just combine all the ingredients into a bowl and mix well, then put it into a baking dish with parchment paper.

Or just grease the dish with a little bit of coconut oil. Bake this for about 20 minutes.

After 10 minutes, start making the Caramel in a small sauce pan at medium heat. You combine all the ingredients and you have to make sure to stir it all the way.

This will take around 5-10 minutes until the caramel is thick and creamy just as you want to have your caramel. Pour the caramel over the baked crust.

Now it’s time to infuse the Snickers into the bars. Add a layer of peanuts on top of the caramel, then follow this by peanut butter.

After that, melt the chocolate in a microwave and pour it all over.  Let it cool in the refrigerator until serving and you are done.

Add a big amount of antioxidants, there is some evidence that eating dark chocolate helps with increasing blood flow and lowering blood pressure. Skin protection against sun is included as well. A super food for the win!

  • 1 cup peanuts
  • 1 cup creamy peanut butter

Instructions

  1. Make a batch of the shortbread dough by combining all the ingredients (see Vegan Caramel Shortbread) into a bowl and mix well, then put it into a baking dish with parchment paper. Or just grease the dish with a little bit of coconut oil. Bake this for about 20 minutes.

I tried making these yesterday but the caramel mixture would not thicken or set. I have been left with a caramel sauce even after placing in the fridge! Any ideas what went wrong?

Hi Linda! I have noticed that the time the caramel mixture takes to thicken depends very much on the quality of the coconut milk. The one I used was pretty thick (and not low fat) to start with. If the milk is very "watery", it can really take longer because the water needs to evaporate first before the caramel sets. In that case, one really needs to keep on stirring the mixture on the stove. And even though it might look as if nothing happens for a while, but then the magic happens. It will work.

Now this is my kind of recipe! I've never been a big shortbread fan, but in this, it would be irrisistable. In my view though, the chocolate is missing from the ingredients.

Loved Snickers as a kid and love them still. My dad used to keep a bag of mini Snickers in the freezer and if he really liked someone he'd offer to share. Of course, I found where they were and didn't wait for an offer:) PS - Did you forget the chocolate in the ingredient list?

I love snickers so much Florian! Those and butterfingers were my favorite candy bars as a kid. These look so much healthier and so fresh and so delicious! I love those closeup shots, they are making me drool! I love that you turned your shortbread recipe into snickers, what a great idea! I bet these would be gone in no time at a party!
