What is Pasta Fagioli Soup
Pasta Fagioli Soup is a soup which is typically made with chicken broth and Parmesan.
So, pretty easy to see, it’s by no means plant based or dairy free.
In my recipe I do something different. No chicken broth or Parmesan in my Pasta Fagioli Soup.
Instead I simply use vegetable broth and optional vegan Parmesan. For more bold and hearty texture, I also used white beans – so good.
Typical recipes calls for you to precook the pasta. So you will need an extra step – and extra pot – for it.
Then you start frying your veggies which you do with butter or oil.
No need for such a hassle with me. We cook everything in one pot, which means:

How to make Pasta Fagioli Soup
You will be surprised how easy to make this Pasta Fagioli Soup can be.
Start with a large pot. Heat a bit of oil or vegetable broth. Add bell pepper, garlic, and optional onions and fry everything for around 4 minutes.
Now add uncooked pasta, vegetable broth, marinara, and cook all for around 12 minutes.
Finally, add the white beans. Seasoning with salt and pepper, optional garlic powder and Italian seasoning.
Serve on plates or in bowls and sprinkle with optional vegan Parmesan.
This soup makes such an amazing dinner or lunch that everyone will enjoy.
