Sopa de Fideo

Sopa de Fideo is indeed the ultimate comfort food and more than just a soup from wonderful tomato broth and amazing seasonings. Once you try it, you know this Mexican soup is a keeper that the whole family will enjoy in no time. Filling, warming, comforting and so easy to make that everyone will come back to a second bowl.

Fideo pasta

Fideo noodles are thin Mexican noodles and you can find them in almost any supermarket.

They are cheap, delicious and make a wonderful texture.

I know for sure if you can’t find fideo pasta, you can surely use angel hair pasta, thin spaghetti or vermicelli and break them into 1 inch pieces. It is truly a easy substitute for fideo.

Reasons to love this Sopa de Fideo

It is a really flavorful soup, but with minimal preparation and ingredients.

Easily make a double or triple batch for a bigger company.

Sopa de Fideo serves great as dinner, lunch or even appetizer.  Even a picky eater will eat this dish, because who doesn’t love noodles?

What you need for this Sopa de Fideo recipe

Pasta: As I mentioned I use fideo pasta, a thin Mexican pasta, here, but you can use angel hair pasta as well. Just break them into 1 inch long pieces and cook them according the package directions.

Vegetable oil: neutral oil is what I use, but you can also use olive oil for example. Keep in mind the olive oil will add a more savory and prominent flavor.

Vegetable broth and diced tomatoes are here to make the base for our tomato broth.

Garlic and onions form another layer of flavor.

Cumin adds a warm note to our soup, and I add hot sauce for a little bit of heat.

How to make Sopa de Fideo

Prepare the soup broth

Take the bowl of a blender and add diced tomatoes, cumin, garlic, onions, chili flakes.

Season with a pinch of salt and pepper and blend until smooth. Mix with the vegetable broth and set aside. 

Fideo pasta is briefly fried in oil.

Toast the noodles

Add oil to a large pot and wait until oil is hot. Stir in the uncooked pasta and toast it for around 2 minutes.

Give in the tomato broth mix and bring to a boil.

Cook the soup for 6 minutes and serve. Add to bowls and enjoy.

Storing instructions

Leftovers: Sopa de Fideo is great for around 4 days.

For freezing, make sure to let it cool completely. Now it is ready to transfer into a larger freezer containers or portion size according to your preferences.

It will be best for around 4 months, but the texture will change a bit though freezing.

  • 7 oz Fideo pasta
  • 2 cups vegetable broth
  • 14 oz diced tomatoes
  • 2 Tbs vegetable oil
  • 4 cloves garlic
  • 1 medium onion
  • 1 tsp cumin
  • 2 dashes hot sauce
  • salt, pepper to taste

Instructions

  1. Prepare the soup broth
