Taco Mac

This Taco Mac is the ultimate comfort food, where macaroni are mixed with  vegan ground beef crumbles, taco sauce and seasoned to tasty perfection. Everything comes together in under 20 minutes. This is such a great meal that the whole family will love.

I have to say I love and like taco dishes a lot, because these are always prepared fast and everyone will enjoy them. They are always winners like this Taco Rice, the Taco Casserole, or my Taco Spaghetti

There is always something so satisfying about these dishes and I can vouch this Taco Mac is no exception.

Who doesn’t love a good mac and cheese? Right that is always right up our alley like this Southern Mac and Cheese or the Creamy Mac and Cheese

Why you will love this Taco Mac

Try and you know this will be a favorite, but better even: it is so easy to make

Taco flavors: If you love taco flavors like me this is such a great dish that everyone can’t get enough of. The difference for me which makes it so great is taco seasoning and of course fresh garlic. Yum.

Texture: I use vegan ground beef crumbles, which not only provide great texture, but are seriously deliciously meaty.

Step by step pictures makes this 20 minute meal even easier.

Salsa, taco spices, vegan sour cream, and jalapenos are added to the vegan ground beef.

Pre-cooked pasta is mixed with the sauce.

What you need for this Taco Mac recipe

Here are the ingredients, as always easy:

  • Macaroni
  • Vegan ground beef
  • Olive oil
  • Garlic

 

  • Taco seasoning
  • Taco sauce
  • Vegan sour cream
  • Jalapenos
  • Vegan cheddar

Vegan cheddar is given to the vegan beef and pasta sauce.

How to make Taco Mac

I suggest to cook the macaroni before so you can save time going forward.

In a skillet or casserole, heat olive oil. Add garlic and vegan ground beef and fry until lightly browned. Add taco seasoning, taco sauce, jalapenos, vegan sour cream, and mix in macaroni.

Finally sprinkle and mix vegan cheddar until just melted (about 2 minutes at low heat).

Serve on plates or in bowls, enjoy.

Finally, the Taco Mac is topped with fresh tomato dices and herbs.

Leftover and freezing instructions.

Leftovers can be stored for approximately 5 days.

For freezing: make sure to cool completely off, then transfer to a freezer bag or make individual portions in containers.

Tips and tricks.

If you can’t find taco sauce, use tomato sauce, salsa or try Enchilada Sauce. Also for more creaminess and richness, this White Enchilada Sauce is also a great base.

It is great with any pasta you can imagine, but for me macaroni is best.

Use fewer jalapenos, if you prefer a milder dish.

You can also use almond milk instead of vegan sour cream, but hey this is just me I’m going for the good stuff.

  • 2 Tbsp olive oil
  • 4 cloves garlic, minced
  • 5 oz vegan cheddar, shredded
  • 2 tsp taco seasoning
  • 10 oz vegan ground beef
  • 1/4 cup jalapenos, finely diced
  • 20 oz taco sauce
  • 3 oz vegan sour cream
  • salt, pepper to taste
