Brunswick Stew

Brunswick Stew is hearty, complex, and delicious. Made with potatoes, beans, vegan chicken and lots of flavors in and out from barbecue sauce and crushed red pepper. It is a great, budget friendly and filling recipe that the whole family will make on repeat.

Reasons to make and love this Brunswick Stew

First of, there if flavor in each and every bite.

Brunswick Stew comes with a really flavorful broth as a base.  I use vegetable broth and combine it with barbecue sauce and tomato sauce.

Really filling and so easy to make in one pot. This recipe goes really fast from start to end. Unlike many Brunswick stews which have to be cooked for hours, you have everything fast and delicious on the table.

It freezes well and is also great for meal prep.

What you need for this Brunswick Stew recipe

Potatoes and I cubed mine the same size so they can cook up in the soup properly.

Bacon bits and chicken (I use plant based, but use whatever you want and like): Bacon bites are naturally vegan and they have a great wonderful smoky flavor. Unless you will read real bacon bites that indicates they are made from bacon.

Vegetable broth, tomato paste and barbecue sauce. All of these ingredients make an amazing thick and delicious broth for our stew.

Lima beans are a typical ingredient in almost any Brunswick Stew.

Corn is another ingredient for a great texture together with the lima beans.

Garlic and onions: are always great in stews, like my Cowboy Stew.

Olive oil and dairy free butter: I use them both – olive oil for cooking the chicken and bacon and butter for the stew.

Finally, crushed red pepper is here ere to give the Brunswick Stew a little bit of a kick and this will be seriously so good.

How to make Brunswick Stew

Start with cooking chicken and bacon bites. In a large pot, heat up olive oil and cook chicken and bacon bites for 3 minutes. Remove from pot.

To make the soup, keep the same pot with the remaining juices from the chicken and bacon. Heat butter and add garlic, onions, as well as potatoes. Cook all on high heat for 2 minutes, then add in vegetable broth, barbecue sauce, tomato paste.

Reduce heat to medium and let simmer for 15 minutes more.

After 15 minutes, add back the chicken and bacon bites, together with the lima beans, corn, crushed pepper and a pinch of salt and pepper.

Cook for 5 minutes more and serve Brunswick Stew in bowls.

Tips and tricks

Leftovers are great for 5 days.

For freezing, let the stew cool completely and freeze in a container for around 4 months.

You can serve this Brunswick Stew alone or with bread, Easy Fried Pickles or Coleslaw.

Ingredients

  • 8 oz potatoes, cubed
  • 1 heaping cup vegetable broth
  • 2 Tbs dairy free butter
  • 1 Tbs olive oil
  • 1/2 cup onions, diced
  • 3 cloves garlic, pressed
  • 6 oz vegan chicken, cubed
  • 5 oz bacon bites
  • 14 oz Lima beans, canned
  • 3/4 cup corn
  • 1 cup Barbecue sauce
  • 1 cup tomato paste
  • 1 tsp crushed red pepper
  • salt, pepper to taste

Instructions

  2. In same pot, melt butter and give in garlic, onions, and potatoes. Cook them on high heat for 2 minutes.

  • For freezing cool completely and freeze in a container for around 4 months.
  • You can serve this Brunswick Stew alone or with bread, salads or anything you like.
