Artichoke Pasta is easy to make, creamy, rich and full of flavor. It taste like artichoke spinach dip, yet even better, is more filling, more delicious and satisfying. Uses a handful of pantry staples, therefore is good enough to impress everyone in no time.

Cheap, because it relies only on a handful on pantry staples which make it perfect for any family budget.

You get a dish that will impress everyone and I can vouch it is great for any occasion. You wouldn’t believe that something so easy can be so good.

Creamy, satisfying and basically it makes itself. If you can cook pasta than you can make this artichoke pasta.

What you need for this Artichoke Pasta Recipe

Pasta: I use penne, but you can do spaghetti, rigatoni or any other that you like.

I used canned artichoke hearts, because these are widely available and taste great. You can also use frozen artichoke hearts, but keep in mind to thaw them before.

Garlic and olive oil are here to add a good amount of flavor.

Non dairy cream cheese: In my gusto it is just the ticket when making creamy sauces. I use them often like in my Creamy Mac and Cheese.

Oat milk is here to thin out our sauce, but you can easily use almond, cashew, soy or any other type of milk that you prefer.

Dairy free parmesan cheese: Makes everything so cheesy and delicious. You can use your favorite or make my Vegan Parmesan Cheese (3 ingredients, 1 min).

Finally spinach adds a fresh component and great texture.

How to make Artichoke Pasta

Cook your pasta according to the directions on the package.

For making the artichoke sauce: Start with heating up a pan with olive oil. Add in garlic and cook for 1 minute. Next add in artichoke hearts, cream cheese, milk, parmesan and a pinch of salt. Let simmer for 2 minutes more.

Finally add spinach and pasta, done.

Serve in bowls or on plates and enjoy.

You can enjoy leftovers for around 4 days. Reheat the Artichoke Pasta on medium heat on the stove or warm up in the microwave.

If you are looking for a thinner sauce, add more milk.

Looking  for an even cheesier sauce? Add more parmesan.

Like it a bit spicy? Use chili flakes or hot sauce.

Save time and use leftover pasta. You can warm up your prepared pasta directly in the sauce.

Ingredients

  • 8 oz penne
  • 7 oz non dairy cream cheese
  • 1 Tbs olive oil
  • 1/3 cup dairy free parmesan cheese
  • 4 cloves garlic, pressed
  • 1/2 cup oat milk
  • 7 oz artichoke hearts
  • 1 cup spinach
  • salt, pepper to taste

Instructions

  1. Prepare the pasta of your choice according to the package directions.
