When I think about what chickpea flour is used for, falafel immediately come to my mind. And I love those, make no mistake. It’s been a while since I last used it though, so there was a good amount of the stuff sitting in my pantry when last weekend my friend Sabrina passed by. She actually had some urgent business to take care of and asked me babysit her daughter Jasmine for two hours. I happily welcomed the 5-year-old and we started playing with her toys. Not long after her mom left, she proclaimed: “I want a cookie!”
Well, I was out of cooking or anything similar – so I told Jasmine that we needed to bake something on our own. She was excited about getting into the kitchen (and making more of a mess there than I usually do) and I had to realize that most of the ingredients for more standard cookies or brownie weren’t there. But there was the chickpea flour, chocolate, almond milk and butter. It might not be good enough for a full-blown brownie but a blondie we can get out of it. This is an easy recipe that is ideal for having a good baking experience with kids: one simply add all ingredients to a bowl and mixes them. Jasmine loved to do it all on her own: adding the flour, milk, syrup, butter – and in particular mixing. She enjoyed kneading the dough with her hands so much that she was almost disappointed when I told her that it was ready to go into the oven.
It didn’t take long and the kitchen was filled with a mouth-watering smell of almonds. Jasmine’s disappointment was quickly replaced with excitement and she was sitting in front of the oven, peering in though the glass door, impatient for our Almond Chickpea Blondie to be ready. When it was finally ready, her Mom was back just in time and we all enjoyed one or two of these blondie each! A tasty finish to an amazing day.
- 3 cups (375 g) chickpea flour
- 3.5 oz (100 g) vegan dark chocolate, chopped
- 2 cups (480 ml) almond milk
- ½ cup (125 g) almond butter + 2 Tbs
- 1 Tbs organic vanilla
- 2 tsp aluminum-free baking powder
- ⅓ cup (80 ml) maple syrup
- 1 handful almonds for garnish
- pinch salt
- Preheat oven to 390°F (200°C) and prepare a baking dish with parchment paper.
- In a bowl, combine all ingredients and mix well.
- Transfer to the baking dish and garnish with almonds.
- Bake for 25 minutes.
