This Aioli Tortellini Salad is super easy to make packed with so many delicious flavors. Entirely vegan and gluten free, it’s fresh and creamy, and the perfect dish for getting spring and summer vibes up.



  • 1 1/2 cups vegenaise
  • 3 cloves garlic, pressed
  • 8 oz tortellini, uncooked (I used gluten free)
  • 1 cup mixed veggies
  • 1/2 cup peas, cooked
  • salt, pepper to taste


  1. Cook the tortellini of your choice according the manufacturer’s directions. While they are cooking, chop the veggies you want to add to the salad. I personally like a mix of bell pepper, onions, and carrots best. They symbolize a crunchy freshness to me. But you can use whatever you like and want.
  2. To make the aioli dressing, mix in a bowl the vegenaise with garlic, and season with salt and pepper. Now add the cooked tortellini, chopped veggies, and peas.
  3. Carefully mix everything with the vegan aioli until well coated. Divide into plates or eat straight from the bowl.
