I think I have mentioned a couple of times that I can hardly wait for spring and summer to arrive.
Now that we are officially in spring calendar-wise, I poke my head out of the windows in the mornings and check if I can see something changed.
So far, nope, not a sight… But I have already been thinking about spring. It has been on my mind for some time and especially the food inspirations that come up with it.
I’m a sucker for Mexican food, you already know that. Come guys, who can say no to Mexican food?
Some time ago I posted my recipe for a Roasted Chili Mango Guacamole which has become one of my favorites since then.
It’s not only a comfort food on its own. I love to dive into it with some veggie sticks or nacho chips. And just thinking about this made me want to work on a new Mexican-inspired comfort food project for sunny days to come.
Benefits or my Baked Potato Stuffed with Guacamole
My love for guacamole and for avocado in general is not just a matter of its taste. There are only very few foods that are also so extremely healthy at the same time.
There is really a long list of health benefits that are awesome. Avocados help with taking up the nutrients of other foods, lowers cholesterol and cancer risks. Make sure you don’t forget to read “The Fit Food Fruit: 7 Benefits Of Avocado For A Long, Healthy Life“.
The recipe is one of small happy bites and is really straightforward to make. Yes you only need 2 ingredients to make the Baked Potato Stuffed with Guacamole.
