This Jalapeno Popper Mac and Cheese is an amazing 30 minute meal. Even picky kids will love this easy dinner with no regrets. It beats any jalapeno mac and cheese velveeta and is the ultimate comfort food. Ideal for meal prep, make ahead meals, quick lunches and always easy for the whole family. No one would ever guess it is vegan and even gluten free. It tastes so rich and cheesy like the real deal, if not better.

Ingredients

  • 10 oz macaroni noodles (use gluten free, if needed)
  • 2 tsp garlic powder
  • 1 batch Jalapeno Popper Dip

Instructions

  1. Preheat oven to 425°F.
  2. First cook your elbow noodles according to the package directions. While the pasta is cooking, get a bowl and combine the vegan cream cheese, mayonaise, cheese shreds (but reserve a bit for topping) and garlic powder. Don’t forget to season with salt and pepper.
  3. When the pasta is done, drain it and mix with the prepared sauce. Transfer to a 10×10 casserole dish, add reserved cheese shreds and optional bread crumbs on top. Bake for around 15 minutes, serve on plates or in bowls.
