Description

These Ranch Style Beans are super easy to make in one pot and a keeper for your under 15 minute meals. Kids friendly and such a rewarding comfort food for everyone. Also naturally vegan, gluten free and versatile enough for meal prep, quick dinner ideas, weeknight meals and more.

Ingredients

  • Mixed beans (I used 1 15 oz can kidney beans, 7 oz can lima beans, 1 15 oz can pinto beans, 1 cup green beans cooked)
  • 3 cloves garlic, minced
  • 3 14 oz cans chopped tomatoes
  • 2 Tbs Chili powder
  • salt, pepper to taste
Optional add ons:
  • 1 cup onions, chopped
  • 2 tsp maple syrup
  • 3 tsp cumin
  • 2 tsp smoked paprika

Instructions

  1. In a large pot use a bit oil or vegetable broth. Add garlic, beans, optional onions.
  2. Fry all for around 2 minutes, then add chili powder, chopped tomatoes and again optional maple syrup, smoked paprika, cumin, season with salt and pepper.
  3. Cook everything for 10 minutes, serve on plates or bowls. This makes a really satisfying one pot meal, meal prep, dinner, lunch. Also I could imagine it is delicious on pumpernickel bread.
